Carrot tarte tatin

Preparation

  • Preheat the oven to 180°C. Peel the carrots.
  • Cut the carrots in half lengthwise and cook them in boiling water for 15 minutes.
  • In a tart dish lined with parchment paper, pour a drizzle of olive oil, add the honey and thyme, then spread evenly.
  • Once the carrots are cooked, arrange them in the tart dish. Season with salt and pepper.
  • Cover the carrots with the puff pastry and fold the edges inward. Prick the pastry, then bake for 20 minutes at 180°C.
  • Once out of the oven, wait 5 minutes before unmolding your tart. To do this, place a large plate on top, then flip it over in one swift motion.
  • Add a few pieces of fresh goat cheese on top and a drizzle of toasted virgin peanut oil.
