Skewer of Pork marinated in coffee, roasted mayo and courgette spaghetti
Ingrédients
Serves 645 minutes
- - 1kg pork loin
- - 1 double expresso
- - 1 tsp sweet pepper
- - salt and pepper
- - 15 cL grape seed oil &.Coffee
- - 1 egg
- - 1 egg yolk
- - 30g dijon mustard
- - 1 organic lemon
- - 2 courgettes
- - Olive oil
Preparation.
- 1. Cut your pork loin into 5cm x 3cm pieces. Place in a salad bowl with the chilli pepper and a good pinch of salt. Add a double espresso (80ml) and mix well. all together. Leave to marinate in the fridge.
- 2. In a jar or jug, add the egg, yolk, mustard and a pinch of salt and pepper. Blend with the grapeseed oil & coffee using an immersion blender (also works in a bowl with a whisk). in a bowl with a whisk! ). Once blended, add 1/2 lemon juice and blend again. Season if necessary and chill.
- 3. Using a mandolin, make courgette sphagetti. Place in a salad bowl and season with salt. Zest 1/2 lemon, mix and chill.
- 4. Preheat your oven to 230°C, grill + fan assisted (can also be done on the barbecue). Remove the pig from the café and assemble your 6 skewers. Once the oven is hot, place your skewers on a rack on the second level from the top. Cook for 5 minutes on one side and 5 minutes on the other.
- 5. Remove the water from the courgettes obtained from the salt. Season with olive oil and pepper.
- 6. Arrange the various ingredients and brush the skewers with grapeseed oil & Café for those with a sweet tooth!
